Appetizers

Sausage Dip by Susan Tucker

1- 8 oz. cream cheese, softened
1 can Rotell Diced Tomatoes & Green Chilies
1 lb. sausage (mild or hot)
Frito Scoops or Tostitos

Cook and drain sausage well. Break into small pieces (I use a pastry blender).
Mix the tomatoes with the softened cream cheese until well blended, then add sausage, mixing well.
Place dip in a glass container and heat in the microwave on high for 3 minutes.
Serve with Fritos or bite size tostitos.


Pineapple Cheese Ball by Susan Tucker

2- 8 oz. cream cheese, softened
1 large can crushed pineapple
1 small green pepper, chopped small
1 small onion, chopped small
1/4 tp salt
2 cups chopped pecans
Triscuit or butter crackers

Mix the chopped pepper, onion, salt and pineapple, then add to the softened cream cheese. Mix well. Add 3/4 cup pecan nuts, mix well and separate into two balls. You may freeze at this point. Roll the cheese balls in the rest of the pecan nuts.
