Tuna Kabobs

 1-1/2 lb tuna steaks, cut into big chunks

1 red bell pepper, cut into big chunks

1 green pepper, cut into big chunks 

1 red onion, cut into big chunks

6-10 mushrooms, cut into big chunks, if need be

2 lemons, cut into big chunks 

1/2 c olive oil

2 TB chopped onion (or 1 TB powder)

1 TB fresh rosemary, chopped

1 tp salt

1/2 tp pepper

2 cloves of garlic, minced


Puree in processor: onion, rosemary, salt, pepper, and garlic. Add in olive oil.

stir kabob ingredients with pureed mixture and create kabobs. Cook 3-6 minutes on each side.

Tuna Steaks

 ahi or yellow fin tuna

pinch of salt & pepper

3 TB olive oil, divided 2 TB and 1 TB

2 TB soy sauce

1 tp fresh ginger, minced

2 cloves of garlic, minced

1 lime, juiced and zest

1 tp sugar

1/2 avocado, thinly sliced

4 c spinach


Season both sides of tuna with salt & pepper. Marinate with 2 Tb olive oil, soy sauce, ginger, garlic, lime, and sugar for 2+ hours. Wilt spinach in 1 TB olive oil and tiny pinch of salt. Sear tuna 2 minutes on each side. Reduce marinade (about 2 minutes) and serve with tuna and spinach.
